Look on the calendar on any given day of the year and there will be something to celebrate. June 25th is National Coconut Day and I can’t think of a better way to celebrate than with a coconut cocktail. Yep, coconut cocktails for National Coconut Day, brilliant.

Besides National Coconut Day, there is a National Pina Colada Day. Just in case you need an excuse to drink one, it’s on July 10th. Pina Colada’s can pack in the calories. The folks from Koloa Kauai  have come up with a lower calorie version so you can have more than one without blowing your calorie budget.

Koloa Kauai is a single batch craft distillery in Kauai, Hawaii that makes a variety of flavored and traditional rum. As you may know, coconut is an important ingredient for Pina Coladas.

Kauai Rum Skinny Colada

Kauai Rum Skinny Colada, a lower calorie version of Pina Colada

Kauai Skinny Colada

1.5 oz Koloa Kauai Coconut Rum

.25 oz Koloa Kauai Cacao Rum

2 oz Coconut Water

1 oz pineapple juice

Splash pineapple soda for effervescence 

Shake ingredients in a shaker and strain into a glass with fresh ice. Garnish with dried pineapple drizzled with chocolate.

The cocktail featured at the top of the page comes from Tommy Bahama, The Marlin Bar at Coconut Point Mall. The al fresco restaurant and bar is a new concept for the restaurant and retailer. It was given to me for a bi-annual column I write for Times of the Islands Media Group and it is fantastic.

Coconut Cloud
1 ½ ounces vanilla flavored vodka
1 ½ ounces coconut flavored rum
1 ounce white rum
½ ounce Coco Lopez Toasted Coconut Flakes, for garnish

In a cocktail shaker, combine all the liquid ingredients with ice and shake well. Strain into a martini glass. Sprinkle with coconut flakes to garnish and serve immediately.
