A Fabulous Find Cocktail
I had a small cocktail party over the holidays and was quite surprised when several people attending did not know what Pisco was. It makes a Fabulous Find cocktail that needs some time in the spotlight. If you know pisco, you know about the famous pisco sour. That is what I was making.
What is Pisco?
Pisco is the national spirit of Chile. It is fermented and distilled from grapes, however, I like to describe it as a cross between tequila and vodka. Last fall, Lapostolle released two new pisco’s, a blanco and an XO. Lapostolle is a world-renowned luxury Chilean wine and spirits brand. Each of the pisco’s is carefully crafted, like a fine, wine, to reflect the so called ‘terroir’ of Chile, characteristics of the land.
Lapostolle Pisco Blanco is white or clear. It’s full of herbal and floral notes. This one has a spicy finish but it doesn’t burn. It have a fantastic Pisco Sour. In fact, I couldn’t make them fast enough.
I have always used a blanco pisco when making cocktails so I was excited to try the XO. It’s aged for six years in French Oak and is this lovely amber color. It looks like it’s made for sipping rather sours, so that’s what I did. Drink it like you would brandy or bourbon to really taste all of its subtleties.
This Pisco XO is another Fabulous Find and something great for connoisseurs of spirits. The blanco runs about $35 and the Xo around $45.
Pisco Sour Recipe, a Fabulous Find cocktail
What makes pisco sours so unique, besides the spirit, is the use of egg whites to create a froth. It’s pretty easy and tastes so good. These cocktails are perfect for Southwest Florida.
Ingredients:
2 oz Lapostolle Blanco
1 ounce Fresh lemon juice
1 oz simple syrup
egg white, one
Directions: Combine all ingredients in a mixing glass with ice. Shake vigorously and strain into a small champagne flute. Top with three drops of Angostura bitters.
