Mornings With Gina Birch

Planning is in full force for Thanksgiving meals. Last week I posted these five side dish ideas. Next week is the grand finale and some of the best turkey tips you’ll find. However, this week for TikTok Tuesday we are looking at 5 decadent and delicious desserts for Thanksgiving dinner.

I know some of the more traditional side dishes can be on the sweet side with ingredients such as corn, pumpkin and sweet potatoes. However, no turkey day dinner is complete without at least one proper dessert. Or if you’re at my friends’ home, an entire table full of desserts.

Pies using seasonal produce are popular for Thanksgiving. Think apple, pumpkin and the likes.

Pumpkin based desserts are a Thanksgiving staple. I for one am not a huge fan. However, when the pumpkin is a little less dense, whipped into a cheesecake, muffin, cookie or the likes, I enjoy it much more.

You could also do something fun with chocolate dipped strawberries. Just look at how creative and festive this dessert is. Kids would love these too.

This is a bonus dessert idea. The key, I think, would be getting those pretzle legs to stick before you dip. Then you are golden. I’m going to give it a shot this year for something different.

You almost have to have some kind of pumpkin dessert on your Thanksgiving table. But this recipe has a little surprise at the end. It’s a Two for One dessert deal.

Pumpkin Pie Bites! 🥧 All you need is a store bought pie, and a cookie cutter! Then you can turn the leftover pieces into pumpkin pie truffles! 1. Mash up leftover pie in a bowl 2. Roll up 1” balls 3. Freeze for 10 minutes. 4. Melt some white baking chocolate, and dip balls in it. 5. Sprinkle with a little cinnamon sugar before chocolate firms up. 6. Stick back in the freezer until ready to serve! (Don’t add whipped cream until ready to serve, or let guests add their own! It does melt down after 10-15 minutes.) #pumpkinpiebites #thanksgivingrecipes #thanksgivingfood #holidayfood #holidaybaking #holidaydesserts

Mini apple pies Ingredients: -2x apples (peeled and chopped into small cubes) -40g salted butter -50g brown sugar -1-2 tsp cinnamon -1/4 tsp nutmeg -2 tbsp lemon juice -1/2 tsp cornflour -3 tsp cold water -2x sheets frozen shortcrust pastry -1x egg (whisked) Method: -Simmer chopped apples, salted butter, brown sugar, cinnamon, nutmeg and lemon juice in a saucepan until the apple have mostly softened. -Mix together cornflour and cold water. -Pour the cornflour slurry into the simmering apples. Mix until thickened then set aside to cool. -Preheat oven to 180C. -Use a round cookie cutter or a glass to cut out rounds in one of the pastry sheets (I made 9). -Use the second sheet of pastry to cut out strips (approx. 1.5cm). -Place approx 1 tbsp of the filling into the centre of each round. -Lay 2 parallel strips of pastry on top of each round, then lay 2 more strips perpendicular to the first to create a lattice. -Cut off any excess pastry on the rounds and use a fork to seal the edges. -Brush the pastry with the whisked egg. -Bake at 180C for 20-25 minutes or golden brown. • Rice Krispy Turkey Treats

Who doesn’t like a good, gooey Rice Krispy Treat? Who knew they weren’t limited to square shapes? I love this idea and it seems fairly easy to execute.

Turkey Leg Treats🍗 #thanksgiving #friendsgiving #ThanksgivingTreats Turkey Leg Rice Crispy Treats Makes 12 Ingredients: 6 pretzel rods 12 mini marshmallows 10oz white melting wafers 1/2 cup salted butter 3 tbsp hot cocoa mix 10 oz mini marshmallow 8 cups rice crispies Cut pretzel rods in half. Cut mini marshmallows in half and stick each half on the bottom of the uncut side of the pretzel stick. Melt white melting wafers according to package directions then dip the pretzels in, marshmallow side down. Allow to dry on parchment paper in the fridge (you can double dip once dried resulting in a better color) For the rice crispy treats, melt butter in a pot on low heat then add hot cocoa powder mix. Once fully incorporated, add in marshmallows and stir until fully melted. Add rice crispies and mix well. Remove from heat. Using about 3/4 of a cup each of rice crispy treats, form into the shape of a turkey leg onto the chocolate dipped pretzel rods. Enjoy!
