Artificial Intelligence, or AI, is everywhere in the news these days. Even places you might not expect. Artificial Intelligence wine making is also happening and the results in this case, are this week’s Fabulous Find.
AI is not without its controversies. It has been used in attempts to deceive voters in heated political battles. It was even used after Hurricane Milton. Did you see the photos that surfaced showing Cinderella’s Castle at the Magic Kingdom in Orlando surrounded by water? It was AI and it looked alarmingly real.
While there are great concerns with AI ethically and politically, there are also many practical and even positive applications for the technology.
What Is Artificial Intelligence Wine Making
Von Stiehl Winery in Wisconsin is using AI to give patrons a say in two of the wines they are crafting and it’s brilliant.
Von Stiehl is the oldest licensed winery in the state, dating back to 1967. It was created by Dr. Charles Stiehl, a physician who wanted a way to sell his Door County Cherry Wine. Today, you can still purchase cherry wine along with cider, grappa, whiskey and more.
One of their newest projects is Artificial Intelligence Wine, both a red and a white blend. The first vintage was released last year with a QR code. Anyone who tried the wine was asked to scan that code and give their feedback.
That information, along with the specs of the wine, were run through two different AI platforms. The results were given to winemakers who used the information to adjust the wine blend to give consumers a wine closer to what they wanted.
The new vintage is out. You’ll know you have it by the V2.0 designation on the label.
Artificial Intelligence Wine Making White
Artful Intelligence White V2.0 is a blend of pinot grigio, viogner, chenin blanc, Riesling, gewurztraminer, and muscat caneli. The feedback from the first vintage included reducing the sweetness of the wine and that is what happened.
To me, the new release smells like a day at the beach. The wine is tropical and has some coconut notes. Still slightly sweet, it was great with spicy Thai food.
Artificial Intelligence Wine Making Red
Artful Intelligence Red V2.0 is a blend of grapes that you might not be familiar with such as Chancellor, Marechal Foch, Dechaunac, and Rougeonalso. Similar to the white, it is less sweet than the first release. It also has less sulfites and more oak. In addition, the wine has a little more spice than I remember, cherry notes and a bit of cola.

Have you ever tasted a wine and thought, “This would be great if only….” or “I like it, but it just needs a little more or a little less….”? If so, this could the wine for you. Creators are not only listening to those suggestions from you but also implementing the changes.
Thinking ahead, these wines could make good holiday gifts. First, they are making wine in Wisconsin. What? Next, these are wines that you can have a stake in developing. Talk about unique.
It will be fun to see how they evolve over the coming years thanks in large part to AI.
